If you’ve ever bitten into a proper NYC style cookie, you’ll know it’s nothing like the thin biscuits found on most supermarket shelves. A great cookie should have a lightly crisp edge, a soft, gooey centre and generous chunks of melted chocolate in every bite.
At Happy Crumb Bakery, we’ve spent months refining our recipe to achieve exactly that. Every cookie is baked fresh in small batches using real butter and premium ingredients, creating a texture and flavour that keeps customers coming back.

What Makes A Cookie “NYC Style”?
The name doesn’t simply refer to size.
A true NYC style cookie is built around texture.
Instead of spreading into a thin biscuit, the dough holds its shape while baking. The outside develops a light golden crust, while the middle stays soft long after the cookie leaves the oven.
That combination creates the experience people remember.
Many bakeries have copied the appearance over recent years, but appearance alone isn’t enough. A thick cookie can still be dry if the recipe hasn’t been carefully developed.
Our Recipe Took Months To Perfect
When we launched Happy Crumb Bakery, we weren’t interested in baking an average cookie.
Our Classic Chocolate Cookie went through more than a dozen recipe revisions before we were genuinely happy with it.
Some batches spread too much.
Others looked perfect but became dry within a few hours.
Some tasted fantastic warm but lost their texture the following day.
Each bake taught us something. We adjusted ingredient ratios, changed mixing techniques, experimented with resting times and fine-tuned our baking temperatures until every stage worked together.
The recipe we bake today wasn’t created overnight. It was built through countless trays of testing, tasting and making small improvements.
That’s the version our customers enjoy today.
Why Ingredient Quality Makes Such A Difference
A great cookie starts long before it reaches the oven.
We use real butter because it creates a richer flavour and softer crumb than cheaper alternatives.
Large chunks of quality chocolate melt differently throughout the cookie, creating pockets of chocolate rather than tiny specks that disappear into the dough.
Every ingredient has a purpose.
Rather than adding artificial flavours, we focus on ingredients that already taste exceptional on their own.

Small Batch Baking Creates Better Cookies
Large manufacturers are designed for efficiency.
We’re designed for flavour.
Every batch is mixed, portioned and baked in smaller quantities, allowing us to monitor consistency throughout the process.
That means we can spot small changes before they become problems.
Fresh dough.
Fresh ingredients.
Freshly baked cookies.
It’s a slower way of working, but we believe it’s the reason our cookies taste the way they do.
Inspired By Britain’s Favourite Desserts
Although NYC style gives us the baking method, many of our flavours are inspired by desserts much closer to home.
Instead of chasing viral food trends, we prefer creating cookies that remind people of desserts they’ve loved for years.
Our menu regularly features flavours inspired by:
- Sticky Toffee Pudding
- Apple Crumble
- Cherry Bakewell
- Bread & Butter Pudding
- Tiramisu
Every new flavour begins with an idea around the tasting table before moving through multiple rounds of testing.
Some recipes make it onto the menu quickly.
Others never leave the kitchen.
If we wouldn’t proudly serve it to friends and family, it doesn’t get released.

A Baker’s Tip

One of the biggest misconceptions about baking cookies is that they should look completely baked before coming out of the oven.
Professional bakers often remove cookies while the centre still looks slightly underdone.
The remaining heat continues baking the middle after the tray leaves the oven.
That simple technique helps create the soft, gooey texture people associate with premium NYC style cookies.
Bake them for another few minutes and you’ll end up with a much drier cookie.
How To Enjoy Your Cookies At Their Best
Although our cookies are delicious straight from the box, warming them transforms the experience.
Around 20 seconds in the microwave softens the centre and melts the chocolate, bringing the cookie back to that fresh-from-the-oven texture.
If you’re saving some for later, they also freeze beautifully for up to three months.
Many of our regular customers intentionally order larger boxes so there’s always one waiting in the freezer.
